2 chicken breasts
2 c thick white sauce (see below)
4 tlb butter
2 green peppers, cut fine
1 lb mushrooms, sliced or 2 (6oz) cans diced mushrms
1 canned pemiento, cut fine
1/4 cup dry sherry
1/2 tsp salt
1/4 tsp white pepper

Thick White Sauce:
3 tlb butter
3 tlb flour
1/2 tsp salt
1/8 tsp pepper
1 cup milk






Directions:
Directions:
Heat 2 cups water in saucepan to a simmer. Add chicken. Cover & simmer until chicken is done. Drain & cut meat into bite size pieces.
While chicken cooks, prepare white sauce. Then heat butter or marg. in saucepan or chafing dish. Add peppers, mushrooms, and saute 10 mins. Add chicken, white sauce, pimiento, sherry, salt and pepper. Mix & beat to boiling point. Serve on toast, split toasted English muffins, biscuits, or corn bread.
