1 pkg active dry yeast
1/2 c warm water, not hot, 110 - 115 degrees
1 3/4 c lukewarm milk, water or potato water
3 T sugar
1 T salt
7 - 7 1/2 c flour
2 T soft shortening

Directions:
Directions:
Dissolve yeast in water. Add sugar, milk, half the flour, salt and shortening to yeast. Beat until smooth and batter sheets off spoon. With hands, mix in remaining flour until dough cleans the bowl. Turn on lightly floured board, let rest 10-15 minutes, knead until smooth and blistered. Place in greased bowl, greased side up. Cover with cloth. Let rise in warm place until doubled, about 1-1 1/2 hours. Punch down. Cover and let rise until almost doubled, about 45 minutes. Make into loaves. Put in greased pan and bake in 375 oven for 40-45 minutes. Immediately remove bread from pan. Place on wire cooling racks. Grease tops with butter if desired.
