1 cooked chicken, diced
1 onion, diced
1 green bell pepper, diced
2 cans cream of mushroom soup
2 cans cream of chicken soup
1 can Rotel, drained
16 oz. grated cheddar cheese
1 pkg. (12) corn tortillas
Chili powder

Directions:
Directions:
Mix diced chicken meat, onion, pepper, soups and Rotel well. Line bottom of large greased casserole with 6 tortillas. Add 1/2 of mixture over tortillas in a layer. Sprinkle half of cheese over this and sprinkle with chili powder. Repeat layers. Cover tightly and bake 1 hour at 300F. Remove cover last 10 minutes to brown cheese.

Don't have to use all the canned soup. Drop one and then don't drain Rotel. There are many versions of this recipe floating around and most are made with canned soups and lots of cheese!
