Mix and chill until firm: 2 pkgs Lime or Lemon Jello, 1 cup hot water, 3 cups pineapple juice and 1/8 cup lemon juice.

Then add and chill until firm: 3 cups grated carrots, 1 1/2 cups crushed pineapple, dash salt and 1 large carton cottage cheese.

Serve as is or with mayonnaise on lettuce.
