2 c Split Peas, washed
4 1/2 c Water
1/2 c Celery, chopped
1/2 c Carrot, chopped
1 Onion, chopped
2 t Salt
2 1/2 c Milk
2 T Bacon Drippings (optional)
1 Clove Garlic, chopped (optional)

Directions:
Directions:
Wash peas, add water. Bring to a boil. Add remaining ingredients except milk. Simmer slowly until peas are soft, about 45 minutes, stirring occasionally. Put through sieve. Add milk and other seasonings as desired. Reheat and serve.
