1 3 oz. package of cream cheese, softened
1 cup grated Sharp Cheddar Cheese
1 cup grated Monterey Jack Cheese
1 4 oz jar of pimento peppers with juice
1/4 to 1/2 cup Duke's mayonnaise or to taste
Salt and pepper to taste

Directions:
Directions:
With electric mixer beat cream cheese until fluffy.
Add grated cheeses, small jar of pimento peppers, salt, pepper, and mayonnaise.
Keeps well in refrigerator as a quick sandwich ingredient.
I like to substitute finely chopped bell pepper for the pimento pepper to make a crunchier spread.
