3 cups grated raw sweet potatoes
3/4 c. buttermilk
1/2 c. milk
2 eggs, well beaten
1/2 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. salt
1 c. pecans, chopped
1 1/2 c. white sugar
1 stick margarine

Directions:
Directions:
Mix all ingredients together except sweet potatoes. As you grate the raw sweet potatoes, put into the liquid mixture to prevent the mixture from turning brown. Mix all together. Cover. Bake at 300 for 1 hour. Do not fill dish full. Take cover off last 10 or 15 minutes and let the casserole brown. (Note: I use a food processor to grate the sweet potatoes, first the grating element, then the S-shaped cutter. It works just as well and is much quicker than grating by hand. It also saves your knuckles!)

This recipe freezes very well. Clifton made this recipe many times. He died in 2006 but I think he would have been happy to contribute it to the cookbook. Billie C.
