1 1/2 lbs. fresh salmon
1 bottle Italian dressing

2 tbsp. shallots (vidalia onion okay)
2 tbsp. balsamic vinegar
3 tbsp. maple syrup
1/4 c. vegetable oil
1/2 c. olive oil
salt
pepper

1 bag of salad greens (Spring Mix)
1 peach (or plums, mangoes, whatever you like)
1 avocado
4 tbsp. sliced almonds (or sunflower seeds, cashews, again whatever you like)

Directions:
Directions:
Put salmon in a Ziploc bag, pour salad dressing in bag and marinate for 30 minutes or longer.

Make dressing:
Mix ingredients and whisk well.

Broil or grill salmon.

Plate salad. Cut up peaches and avocado and put on salad along with the nuts. Cut salmon into 1 long piece for each person. Put it hot over the salad. Drizzle a good amount of dressing on top.
