1 cup self-rising cornmeal
1/2 cup self rising flour
1/2 cup onion, finely chopped
1 egg. lightly beaten
1/2 cup milk or beer

Add 1 tbsp. sugar if desired.

Directions:
Directions:
Combine first 4 ingredients in a large bowl. Add egg and milk or beer, stirring just until moistened. Let stand 10 minutes.

Pour oil to a depth of 2 inches. Heat to 375 degrees. Drop by in rounded tables into hot oil and fry, 2 to 3 minutes on each side or until golden brown. Drain on rack over paper towels. Serve immediately.
