2 lb potatoes
2 tbsp heavy cream
1/4 tsp salt
1/8 tsp pepper
2 tbsp butter
2 large cloves garlic, minced
6 oz brie, with rind removed, sliced
Chopped chives or green onion

Directions:
Directions:
1. Cook potatoes in boiling salted water to cover in large saucepan for 20 minutes or until tender. Drain; Peel. Mash the potatoes with the heavy cream in a large bowl. Season with salt and pepper. 2. Meanwhile, melt the butter in a small saucepan. Saute the garlic in the butter for 1 minutes. Add the Brie; stir until completely melted. 3. Stir the melted cheese mixture into the mashed potatoes; garnish with chopped chives or green onion. Serve immediately
