2 tbsp olive oil
2 lb small new potatoes, washed, patted dry, quartered
1 tbsp each; minced garlic, minced shallot
1 tsp each; thyme, minced rosemary
1/2 tsp freshly ground nutmeg
1/4 c balsamic vinegar
salt and freshly ground pepper

1. Put rack in lower third of oven set at 400. Have ready a jellyroll pan. 2. Heat oil in 12 inch skillet over medium high heat. When hot, add potatoes, garlic, shallot and herbs. Toss to mix well. Cook until potatoes are heated through about 3 minutes. Transfer them to jellyroll pan; spread them in a single layer. Can be made several hours ahead to this point. Keep at room temperature. 3. Bake until golden and just tender about 25 minutes, turning once midway. Add vinegar. Toss well. Season with salt and pepper. Return to oven until sizzling, about 7 minutes. Serve immediately
