1 tbsp sesame oil
3 tbsp shallots, minced
1 1/2 tsp ginger, minced
3 cloves garlic, minced
1 c uncooked brown rice
2 1/2 c chicken stock
Zest of one lemon, minced
2 tbsp cilantro, minced
3/4 c raw cashews, toasted and coarsely chopped.

Heat sesame oil in saucepan or skillet with cover, over low heat. Add shallots, ginger and garlic and saute gently until softened. Add brown rice and stir to coat well. Add stock and bring to boil, then reduce heat and cover. Simmer until rice is tender and liquid is absorbed, about 45 minutes. Remove from heat. Stir in lemon zest, cilantro and cashews. Season to taste.
