Roasted Garlic:
12 cloves garlic, unpeeled
Olive oil
Marinated pork tenderloin;
3 lb pork tenderloin
1 c olive oil
2 to 3 tbsp cilantro, chopped
1/4 c lime juice
Salt and freshly ground pepper
Roasted garlic-cilantro butter;
1 tbsp roasted garlic
1 tbsp cilantro, chopped
1 stick butter, softened
1 tbsp lime juice

Directions:

For the pork; Trim pork tenderloins, Mince remaining roasted garlic and add enough garlic oil to make 1/4 cup. Combine with the olive oil. Add cilantro and lime juice. Mix well and season to taste. In a non aluminum pan, marinate pork at least three hours. Remove pork from marinade. Tuck thin tail under each tenderloin and broil under hot broiler or grill over charcoal fire until medium to medium well (150 to 160). Time will vary depending on thickness of meat and intensity of heat. Let meat rest covered for 10 minutes. Meanwhile make the butter; In blender of food processor, puree the tablespoon roasted garlic and cilantro. Add butter and lime juice and process till smooth. Season to taste. Chill.
