1 lg. onion
1 tbsp. butter
1-1/4 c. chicken
1 c. salsa
1 c. long grain rice
1/8 tsp. garlic powder
4 boneless/skinless chicken breast
3/4 c. cheddar cheese (shredded)
Chopped cilantro or parsley

Directions:
Directions:
In large skillet saute onion in butter till tender. Add broth and salsa, bring to boil. Stir in rice and garlic powder. Place chicken over rice; cover and simmer 10 min. Turn chicken; cook 10-15 min. longer or till meat juices run clear. Remove from heat. Sprinkle with cheese; cover and let rest 5 min. Garnish with cilantro.
