2 lb. Alaskan salmon filet, with the skin, cut into 4 pieces
2 c. finely diced ripe mango (about 2 mangos)
1 c. finely chopped pineapple
1/4 c. finely chopped red onion
3 tbsp. fresh chopped cilantro
juice of 1/2 lime

Directions:
Directions:
Combine all ingredients except salmon. Season to taste and set aside for at least 1 hour. Set a non-stick skillet over medium-high heat. Season salmon with salt and pepper to taste. Place salmon in hot skillet, skin side down, and cook for 5 minutes. Don't worry if the skin blackens. Turn and grill salmon until cooked, about 3 minutes. Garnish with mango salsa when serving.
