2 lb. lean stewing beef, 1 inch pieces
2 large potatoes, diced
2 onions, chopped
3 carrots, chopped
2 celery stalks, chopped
6 sprigs parsley
1 tbsp. salt
1/2 tsp. thyme
1/4 tsp. pepper
1 1-lb. can tomatoes (w juice), chopped
1 can water
1 pkg. frozen mixed vegetables, thawed

Directions:
Directions:
Combine all ingredients except mixed vegetables in a slow cooker. Cook on low for 10 hours. Add mixed vegetables and heat thoroughly.
