3 ripe bananas
1 tbsp. lemon or orange juice
2 c. cooked rice
1 c. sugar or 1/2 c. honey
3 eggs
1 1/2 tsp. grated lemon or orange rind
2 c. milk
nutmeg
whipped cream
sliced bananas

Directions:
Directions:
Grease 2 qt. casserole dish. Mash bananas and add juice and rice. Beat sugar and eggs, stir in rind and milk. Add to rice mixture and mix well. Pour into dish. Sprinkle with nutmeg. Bake at 350 degrees for 1 hour. Chill for at least 4 hours. If desired, garnish with cream and bananas.
