3 egg whites, at room temperature
1/3 c plus 3 tbsp sugar
2 egg yolks
1/2 tsp vanilla
1/8 tsp salt
1/3 c flour

Directions:
Directions:
Grease and lightly flour ladyfinger tins or cookie sheets or line cookie sheets with parchment paper. In medium bowl beat egg whites until soft peaks form; slowly beat in 1/3 cup sugar until stiff; set aside. In large bowl beat egg yolks, vanilla and salt until thick and pale yellow. Fold in egg whites just until blended; gradually fold in flour. Spoon mixture into ladyfinger tins or pipe 4 to 5 inch fingers with pastry bag onto prepared cookie sheets. Sprinkle lightly with remaining 3 tablespoons sugar. Bake in preheated 350 oven 10 to 12 minutes or until lightly colored.
