2 c heavy cream
1 or 2 bay leaves
1/3 to 1/2 c sugar
6 egg yolks, slightly beaten
3 to 4 tbsp superfine sugar

Directions:
Directions:
In saucepan heat cream and bay leaves until bubbles form around edge. Stir in sugar. Gradually pour about 1/3 into egg yolks; mix well, then slowly stir egg yolk mixture into remaining cream mixture. Cook over hot water or low heat, whisking constantly, until consistency of thin mayonnaise. Remove bay leaves. Pour into shallow 1 quart flameproof baking dish. Chill several hours. About 1 hour before serving, sift superfine sugar in an even, smooth layer over cream. Broil 4 inches from heat, watching carefully, until sugar melts and becomes crispy about 3 to 8 minutes. Chill until ready to serve.
