1 loaf of day old bread, toasted & diced in cubes
1 pkg of hamburger buns, dried and cubed
1.c. onion, chopped
1 c. celery, chopped
2 eggs
1 stick oleo
1 to 2 tsp. sage
1 to 2 tsp. poultry seasoning
Salt and pepper

Directions:
Directions:
Cook the neck and any boney pieces of chicken or turkey, with extra onion, celery leaves, salt & pepper. Strain off liquid and discard bones etc. Pour over bread cubes. Beat 2 eggs and pour over bread making sure bread mixture is cool. Saute onion & celery in oleo. Add to cubes. Add sage and poultry seasoning, salt & pepper and mix all well in cubes. Can add chicken broth or water if needed. Bake in large buttered pan at 350 for 45 min. to 1 hour, stirring once or twice. May add 1 pkg. of prepared Stove Top stuffing mix for flavor and to stretch recipe.
