1/4 c. vegetable oil
2 c. broccoli florets
2 medium carrots, sliced
1 celery stalk, sliced
3 scallions, sliced
1 garlic clove, crushed
1 tsp. grated, fresh ginger
1 1/2 lbs. skinless, boneless chicken breasts cut into 1/2 in. pieces
1 can chicken broth
1/4 c. dry cooking sherry
1 c. long grain white rice
1/2 c. dry roasted peanuts

Directions:
Directions:
In wok or skillet, heat 2 T. oil on high. Add broccoli, carrots, celery, scallions, garlic, and ginger and stir-fry until crisp-tender, 4-6 min. Remove to bowl. In same wok, heat remaining 2 T. oil on high. Add chicken and stir-fry until meat is white throughout, 3-4 min. Remove to bowl with vegetables. Add chicken broth, sherry and soy sauce to wok. Heat to boiling. Add rice. Reduce to low, cover, and cook until rice is tender, 18-20 min. Return chicken and vegetables to wok. Add peanuts. Cook, stirring until heated through, 1-2 minutes.
