1 1/4 lb. skinless boneless chicken breasts
1 egg white
1 T. plus 2 tsp. cornstarch
2 T. soy sauce
1/4 c. chicken broth
1 T. rice wine vinegar
1 T. Asian sesame oil
3 1/2 T. vegetable oil
1/2 lb. fresh mushrooms, sliced
3 scallions, chopped
1/4 c. Chinese chili paste with garlic

Cut chicken in 1/2 inch pieces. Put in med. bowl and add egg white, 1 T. cornstarch, 1 T. soy sauce and 2 T. water. Toss to coat. Cover and marinate for 1 hr. In small bowl, whisk together chicken broth, vinegar, sesame oil, and remaining cornstarch and soy sauce. Set aside. In wok or skillet, heat 2 T. veg. oil on high add chicken and stir-fry until meat is white throughout, 3-4 min. Remove. In same wok, heat remaining oil on high and add mushrooms, scallions and stir-fry until tender, 2-3 min. Add chili paste & cook 2 minutes. Return chicken to wok. Add vinegar-sesame oil mixture and cook until sauce boils and thickens, 1-2 min. Can serve with prepared rice.
