4 boneless-skinless chicken breasts
1/4 tsp. salt and pepper
3 tsp. olive oil
2 pears (any variety), peeled, cored and diced
1/4 c. finely chopped shallots
1 tsp. curry powder
1/2 c. dry white wine (or dry vermouth)
1/2 c. chicken broth
2 tbsp. cilantro
1 tbsp. mint
2 tbsp. unsweetened coconut milk

Directions:
Directions:
Season chicken on both sides with salt and pepper. Heat 1 1/2 tsp. oil in a skillet over medium-high heat, cook chicken until browned, about 3 minutes per side. Transfer to a plate tented with foil. Reduce heat to medium, add 1 1/2 tsp. of oil to pan. Add pears, shallots, and curry powder. Cook, stirring, until softened (about 2-3 minutes). Add wine and broth, bring to a simmer. Cook until slightly thickened, about 3 minutes.
Return chicken and juices to skillet, reduce heat to low. Simmer until chicken is cooked through, about 4 minutes. Transfer chicken to warmed platter. Stir in coconut milk, cilantro and mint to skillet. Season to taste with salt and pepper, and spoon over chicken.
