1 1/2 c. butter
1/2 c. chopped celery
1/2 c. grated carrots
1/2 c. finely chopped onions
1/2 c. flour
4 1/2 c. chicken broth
1/2 tsp. dry mustard
2 T. Parmesan cheese
6 ounces grated Cheddar cheese
1 12-ounce can beer
salt & pepper to taste

Melt butter in a large saucepan. Saute vegetables until limp - do not brown. Stir flour into sauteed vegetables all at once and continue stirring over low heat, until flour expands. Gradually add chicken broth, stirring constantly until thickened. Simmer 5 minutes. Blend in cheeses and beer, stirring constantly until cheese melts. Add seasonings and simmer 10 minutes.
