2 filets Rainbow Trout
1/2 c. pecans, finely chopped
1/4 c. dry white wine (or dry vermouth)
2 tbsp. unsalted butter

Directions:
Directions:
In a small pan, add oil and wine over medium-high heat. Allow to simmer for about 2 minutes. Add chopped pecans, turn heat to medium-low. Stirring, simmer until pecans have absorbed wine and butter, about 3-4 minutes. Preheat oven to 350 F. Place trout in a lightly oiled baking dish, spoon pecan mixture over the trout. Bake for about 15 minutes, or until the edges of the fish are slightly golden brown.
Serve with fried green tomatoes and grits.
