1 - 1 1/2 lb baby beef liver
1/2 lb fresh mushrooms, sliced
4 medium onions, sliced
2 T butter
3/4 c flour
Salt and pepper
1 pkg dry onion soup mix
Water

Directions:
Directions:
Brown mushrooms and onions in large deep skillet in 1 T butter. Remove from skillet and set aside. Rinse liver. Cut into 6" pieces. In a large bag, put flour, salt and pepper. Add liver pieces one or two at a time and shake to coat. Add flour if necessary. When all pieces are coated, place them in the skillet and brown well on both sides using remaining butter. Add butter if needed. When liver pieces are nicely browned return onions and mushrooms to skillet. Sprinkle with onion soup mix. Add water until level of liquid covers contents of pan. Cook until liquid thickens to a gravy consistency. To serve ladle mushrooms, onions and gravy over liver.
