1 - 28 oz. can petite diced tomatoes, puree half,
1 - 15 oz. can tomato sauce,
1 Tbsp. lemon juice
1 medium onion, chopped,
Small amount of oil for sauteing,
1/2 tsp. salt,
1/4 tsp. pepper,
1/2 tsp. thyme,
4 oz. cream cheese, cubed,
2 oz. grated sharp cheddar,
2 oz. grated mozzarella,
1 Tbsp. grated parmesan,
1 c. half & half

Directions:
Directions:
Puree half of diced tomatoes in a food processor or blender. Heat the tomatoes, tomato sauce and lemon juice over medium heat in a large stock pot.

Meanwhile, saute onions in a small amount of oil until softened. Add to tomatoes along with salt, pepper and thyme. Heat until almost boiling and add cheeses. Stir until cheeses are melted. Add half & half and continue heating for another minute or until soup is almost boiling.
