4 large eggs, beaten
4 c. finely grated cheddar cheese
1 jar sliced or chopped jalapeño peppers (I like Pace brand; amount of "heat" depends on personal taste)

Directions:
Directions:
Lightly grease an 8 x 8 inch baking pan. Place a layer of peppers on the bottom.

Mix eggs and cheese until well incorporated. Spoon in pan. With finger slightly mix in peppers.

Bake at 350º for 30 - 40 minutes or until very lightly browned. Allow to cool for about 20 - 30 minutes.

Cut into small squares to serve.
