Neck & giblets from turkey, rinsed well
4 cups water
1 celery rib with leave on, cut into pieces
1 medium onion, quartered
1/2 cup flour
1 tsp. black pepper
1/2 tsp. salt
1 egg, boiled, chopped

Directions:
Directions:
Combine first four ingredients & salt and pepper, bring to boil and simmer at least 2 hours. Remove from heat when tender. Remove meats, chop into small pieces and set aside. Reserve broth.

Mix together flour and 1/2 cup water until smooth. Set aside.

Stir 3 1/2 cups broth into the baking pan from baked turkey with drippings. Stir and mix together. Pour into a sauce pan add pepper & pepper to taste; bring to a boil. Slowly add the flour mixture stirring constantly until thickened. Stir in chopped meats and chopped eggs.

Serve
