Shallots
garlic
olive oil
white wine
fresh lemon juice
capers
hot sauce
half & half
butter
salt & pepper
Tilapia fillets

Directions:
Directions:
Chop a couple of shallots and a couple of garlic cloves and saute in alittle olive oil in a hot skillet. Watch closely so they don't burn. Add some white wine (about a cup), the juice of a lemon, a couple Tbsp of capers and hot sauce to taste. Cook together for a few minutes. Poach the fish is this sauce until done. It only takes acouple of minutes. Remove fish from liquid and add cream and 2 or 3 Tbsp of butter to sauce. Add salt & pepper to taste and pour over fish.

This is kind of a make up as you go recipe. We just add to the saucepan until it looks right and tastes good. Have fun and be creative!
