1 c. White rice
1 lb. Italian sweet sausage, removed from casing
1 Small onion, chopped
1 Stalk of celery, chopped
Small can of sliced mushrooms
1 Clove garlic, chopped
Salt and pepper
Handful seasoned breadcrumbs
Turkey gizzards

Directions:
Directions:
Cook the rice and set aside. Brown sausage alone in large frying pan.

Add onion, celery, mushrooms, turkey giblets, garlic, salt and pepper to the browned sausage in pan. Mix well and then turn gas off.

Add the cooked rice and breadcrumbs into the sausage mixture. Mix well and proceed to stuff the turkey.

As a child, I remember eating more of the stuffing than the turkey. My sisters and brother also enjoyed this stuffing better than the turkey.
