1 c margarine, softened
1 c brown sugar
1 c flour
3 c oatmeal
1/4 c boiling water
1 tsp soda
1 tsp vanilla

Directions:
Directions:
Cream margarine, sugar and vanilla together. Add flour, mix well. Add oatmeal. Pour boiling water in cup; add baking soda (it will foam when mixed). Add to cookie mixture, mix well. Roll into balls. Place on ungreased cookie sheet. Flatten slightly with a fork. Bake at 350 for approx. 10 minutes.

The original recipe did not call for vanilla, but I think it tastes better with it.
