3 lbs fresh spinach, washed & trimmed
2 tbsp butter or margarine
2 tbsp vegetable oil
Salt
Ground black pepper
2 tbsp lemon juice
1 c (3 1/2 oz) Flaked coconut

Directions:
Directions:
Coarsely chop spinach. Slowly heat butter and oil in large skillet, wok or Dutch oven. Toss in spinach by handfuls, a little at a time, and stir-fry over medium high heat, pushing cooked spinach to one side of pan as you add more. Continue stirring and cooking until spinach is tender-crisp (it will take only 2-3 minutes), don't overcook!! Season to taste with salt and pepper. Toss with lemon juice and 1/2 c coconut. Spoon into serving bowl or chafing dish. Mound remaining coconut on top
