Crust:
3/4 c flour
dash salt
5 T butter
1/2 c quick oats
2-3 T cold water

Filling:
8 - 10 peaches
1/2 c sugar
dash salt
4 T flour
1 T lemon juice
1 tsp almond extract
2 T butter

Directions:
Directions:
Prepare peaches and cut into quarters. place in a greased casserole. Combine sugar, salt and flour and sprinkle over peaches. Sprinkle lemon juice and almond extract over top. Dot with butter. Sift together flour and salt. Mix in the oats. Blend butter into dry ingredients and add enough water to hold together. Roll out to 1.8" thick. Cover peaches with sectioned crust. Bake 10 minutes at 450 degrees, then 40 minutes at 350 degrees.
