1 c flour
1 pkg lemon pudding mix
1/2 tsp salt
1/3 c shortening
3 oz pkg softened cream cheese
3 eggs
1/4 c sugar

Directions:
Directions:
Mix flour, salt and shortening. Add 1 egg, mix to form dough. Roll out and place in pie pan. Prick with fork and bake at 400 degrees for 12-15 minutes.
Prepare pie filling accordingto package directions using 2 egg yolks and cream cheese. Combine egg whites with sugar beating until stiff. Fold into lemon mixture. Spoon into baked shell and chill at least 2 hours. Before serving, sprinkle crumbles of pastry around edge of pie.
