1 1/4 c mashed cooked sweet potatoes
1/2 c packed brown sugar
1 tsp cinnamon
2 beaten eggs
1/4 tsp salt
1 c evaporated milk
1/4 tsp each ginger, nutmeg & salt
1 T melted butter
1 c flaked coconut (divided in half)

Directions:
Directions:
In large bowl, mash sweet potatoes and blend with brown sugar, cinnamon, salt, ginger, nutmeg, eggs, milk, butter and 1.2 c coconut. Pour into unbaked pie shell. Bake at400 degrees for about 35 minutes. Cool. Just before serving, garnish with whipped topping and remaining coconut.
