4 - 5 lb. boned, rolled & tied pork roast
2 tbsp. prepared mustard
2 tsp. thyme
1/2 c. sherry
1/2 c. soy
1/4 tsp. garlic powder
1 tsp. ginger
red potatoes (optional)
Sauce:
1 10-12 oz jar current jelly
1 tbsp. soy
2 tbsp. sherry

Directions:
Directions:
Rub mustard & thyme all over roast. Combine next 4 ingredients and pour over meat. Cover with plastic wrap, refrigerate overnight and turn the next morning. Cook uncovered at 325 for 2 1/2 - 3 hours. Mix sauce ingredients together and heat until blended. Serve in gravy boat. If you want to cook potatoes around the roast add them the last 1 to 1 1/2 hours of cook time.
