3 c seedless raisins
3 c hot water
1/2 tsp grated lemon rind
2/3 c granulated sugar
3 T flour
1/4 tsp cinnamon
1 T butter

Directions:
Directions:
Line a 9" pie plate with pastry (as in making a 2-crust pie). Boil raisins, water, lemon rind together for 3 minutes. Combine the sugar, flour and cinnamon; add a little of the juice from the raisins and stir until well blended. Add this mixture to the raisins and cook together until clear, about 5 minutes. Add the butter and cool. Pour into the pastry lined pan and place the top curst on pie. Bake at 425 degrees for 30-40 minutes.
