1 c buttermilk baking mix
1/2 c sugar
1/3 c unsweetened cocoa
2 tbsp oil
1 egg, lightly beaten
2/3 c milk
1/4 tsp almond extract
Choice of toppings

Directions:
Directions:
Preheat waffle baker; grease. In medium bowl, combine all dry ingredients. In small bowl, combine remaining ingredients and add to dry ingredients; stir until well mixed. Pour some of the batter onto the waffle grids. Cover and bake. Do not lift cover during baking. When waffle is baked, loosen with fork. To serve, top with whatever is on hand, such as sour cream, toasted almonds, fresh strawberries, Ice cream or cream cheese.
