2 Tbsp olive oil 1 tsp paprika 3/4 tsp chili powder 1/2 tsp salt 1/4 tsp ground red pepper 1/8 tsp black pepper 6 1/2 cups diced baking potato (about 2 1/2 pounds) Cooking spray
Preheat oven to 400ºF Combine first 6 ingredients in a large bowl; stir well. Add potatoes; stir well to coat. Place potatoes in a single layer on a cookie sheet coated with cooking spray. Bake for 30 minutes or until browned.
