Ingredients:  
Three or more pounds of fat-trimmed pork loin (amount depending on size of crock pot)
2 T. canola oil
3 c. apple juice
3 Granny Smith apples
1 c. fresh or dried cranberries
3/4 t. salt
1/2 t. pepper

Directions:
Directions:
Brown roast on all sides in oil. Place in slow cooker. Add remaining ingredients. Cover and cook on low 6-8 hours.
