6 cups spinach
dressing
1T diced sun dried tomatoes in oil
1/2 cup pine nuts (optional)
2 T EVOO
1/2 small onion chopped
1/4 t salt
1/8 t pepper
1/2 t sugar
1 T balsamic vinegar
1/2 cup feta cheese crumbled

Directions:
Directions:
brown tomatoes and onion (optional pine nuts) in EVOO. When onion wilted but not toasted add seasoning. remove from heat and swirl in vinegar.

pour over spinach; toss then top with cheese.
