6 medium red potatoes peeled, and diced
1/2 cup diced onions
1/2 cup chopped celery
1/2 cup finely chopped carrots
1/4 cup butter
tablespoon salt
2 cans chicken broth
1 can evaporated milk or 2 cups half and half
3 tablespoon flour ..
6 to 8 ounces cheese whiz or Velveeta (optional)

Directions:
in a large pot saute onions, celery and carrots in melted butter until onions are clear,,, add potatoes chicken broth and salt, bring to boil and simmer for 20 to 30 minutes until potatoes are tender... mix flour with milk ,blend until smooth, add to potato mixture, heat well, do not boil... add cheese whiz or velveeta (cut into cubes) heat until cheese dissolve,,, do not boil...
