3 eggs
1 cup sugar
3/4 cup cooked mashed pumpkin
1 tsp lemon juice
3/4 cup all purpose flour
1 tsp baking powder
2 tsp ground cinnamon
1/2 tsp ground cloves
1/4 tsp ginger
1/4 tsp salt
1 cup chopped pecans
powdered sugar

1/4 cup butter, softened
8 oz cream cheese
1 cup powdered sugar
1/2 tsp vanilla

line bottom of 15X10X2 inch jelly roll pan with waxed paper
Beat eggs at high speed until thick and lemon colored,about 3 to 5 minutes
gradually add sugar, beating additional 3 minutes, gradually add pumpkin and lemon juice, beating well, combine dry ingredients, sifting together, gradually add to pumpkin mixture.. Pour batter into prepared pan, spreading evenly.. Sprinkle with chopped pecans.. Bake 375 for 12 to 15 minutes or until wooden tooth pick inserted in center comes out clean
sift powdered sugar in a 15X10 inch rectangle linen towel. When cake is done immediately loosen edges of wax paper from sides of pan and turn out onto sugar towel,, peel off waxed paper, starting with narrow end, roll up cake and towel together.. cool on wire rack, seam side down.. unroll cooled cake and spread with filling,,, re-roll cake removing the towel, chill until serving time..
Filling: combine butter and cream cheese beating until light and fluffy.. add powdered sugar, flavoring.. beat until smooth
