1 baked pie crust
1 egg
1 egg yolk
3/4 c sugar
1/2 c flour
1 c hot milk
3 tbsp butter
1/4 tsp almond extract
1/2 c blanched almond, finely chopped
2 pints strawberries, washed, hulled and halved
1/3 c currant jelly

Directions:
Directions:
Beat egg, egg yolk, sugar and flour in a medium size saucepan until well blended. Stir in hot milk, blending well until mixture is smooth. Cook over low to medium heat, stirring constantly until pastry cream thickens and bubbles. Remove from heat. Stir in butter, almond extract and almonds. Press a piece of plastic wrap directly on surface of pastry cream to keep skin from forming. Cool to room temperature. Spoon into baked crust. Arrange berries over pastry cream. Brush berries with currant jelly. Refrigerate until ready to serve.
