2" thick top sirloin
peppercorns

Directions:
Directions:
Grind up a handful of peppercorns and press them firmly into both sides of the steak with the heel of your hand. Let the steak stand at room temperature for a least an hour.
Next, put an iron skillet on the stove...high heat...for two minutes, then lay in your steak. Sear both sides of the meat until brown. Cut back the heat to medium low after turning the first browned side down. Salt liberally and cover the pan. Fry the steak for an additional 5 to 8 minutes depending on how rare you like your beef. While your steak is frying, heat a platter in the oven (400) and serve your steak with sizzle.
