8-12 sole fillets
2 tbsp butter
2 tbsp onions
1 1/2 c dry white wine
Salt and Pepper
1/2 c cream
4 egg yolks
tiny cooked shrimp

Directions:
Directions:
Roll fillets individually. Melt butter add onion and cook 5 minutes. Arrange rolled fillets over onion and pour in wine. Squeeze in lemon add salt and pepper. Cover and simmer 20 minutes. Remove sole. Add cream to fish stock and then add lightly beaten egg yolks. Bring to a boil. Simmer, stirring until slightly thickened.
