2 large garlic cloves, minced
salt and pepper to taste
1/3 c olive oil
6-8 roma tomatoes, coarsely chopped
handful of chopped fresh basil
24" baguette
Grated provolone, fontina or mozzarella cheese (optional)

Directions:
Directions:
In a shallow bowl, combine garlic, salt, pepper and oil. Stir to combine. Add tomatoes and basil. Toss gently and set aside. Cut bread in half, lengthwise. Brush each side with additional oil and place under a preheated broiler until golden brown. Spoon tomato mixture onto each half and drizzle with olive oil and sprinkle with cheese. Broil and watch carefully to warm. Cut and serve immediately.
