2 c. flour
1 T. sugar
1 tsp. baking powder
1 tsp. bking soda
1/2 t. salt
1/4 c. butter cut into pieces
1 egg
1 c. heavy cream
1/2 c. dried currants (optional)

Directions:
Directions:
Preheat oven to 400
Sift flour, sugar, baking powder, baking soda and salt
together.
Cut in butter wth pastry blender until mixure resembles
course
meal; stir in currants.
Beat together egg and cream and add to flour mixture. mix
well.
Knead approx. 30 seconds to form a soft ball.
Pat into a circle approx. 1/2" high. Cut rounds with a 2"
cookie cutter. Handle dough as little as possible.
Put on lightly greased cookie sheet; brush with egg wash if
desired. Bake for 12 to 13 minutes
