3/4 c dry white wine
3/4 tsp saffron threads, crumbled
3 tbsp butter
1 1/2 c onion, chopped
2 1/4 c white rice
3 3/4 c chicken broth

Directions:
Directions:
Mix wine and saffron in medium bowl. Let stand 5 minutes. Melt butter in large saucepan over medium high heat. Add onion; saute until soft, about 5 minutes. Add rice and stir 2 minutes. Add wine-saffron mixture; simmer until almost evaporated, stirring often, about 5 minutes. Add broth; bring to boil. Reduce heat to low, cover, and cook until rice is tender and liquid is absorbed, about 18 minutes. Season with salt and pepper
